My journey as a Chef started early in my life; I came from a family that absolutely loves cooking and by the age of 14 I was a short order cook at a small family restaurant near my home. As time progressed I gained valuable cooking experience as i traveled and cooked for many restaurants around the southeast region of the United States. In the early 80's I opened my first restaurant, the "Royal Diner". My menu was fixed to serve breakfast, lunch, and dinner; it was here that I knew this is what I wanted to do for the rest of my life. As I fast forward to the early 2000's I went to work for the troops in Iraq with the automotive armors group and from there i was appointed the company cook. My cooking duties did not stop at preparing meals for my company; military special events and all the company's events as well. During some leisure time I was able to visit the Philippines, fell in love and once my tour was over I came back to the Philippine where I discovered AHA and enrolled and graduated from the culinary entrepreneurship program and culinary arts program. In 2008 I returned to the United States and began my quest as a self-emplyed business owner. I started Fat Reggie's American Grille (a mobile catering service). Once established Fat Reggie's would go on to serve as the BBQ vender for the Riverside Arts Market. In 2010 I returned to the Philippines and southeast Asia for more research on Asian cuisine where I developed my fusion style. Currently, I have a line of sauces, rubs, and salad dressings.
When I am asked about my Specialty, my reply is simple; It's the fusion of bringing together herbs, spices, ingredients and cooking methods from different cultures. It's always a great taste when Mr. Fusion is on call at Fat Reggie's American Grille.
